Mashed Potato Pancakes

This is a great way to use up left-over mashed potatoes. These can be made sweet or savory, just by adding some additional salt, or adding sugar instead. For the savory version, they go great with left-over gravy or apple sauce.

INGREDIENTS

  • Mashed potatoes
  • Eggs (about 1 egg per cup of mashed potatoes)
  • Flour (about 1-2tsp per cup of mashed potatoes)
  • Sugar or salt, to taste.

PREPARATION

Mix the mashed potatoes, eggs, flour and either sugar (if making sweet pancakes) or salt (if making savory pancakes.) Heat a pan on medium heat and add about 2 tblsp. oil. Add the mashed potato batter one tablespoon at a time. A large pan can hold 4-6 small pancakes. Brown for about 2 minutes on each side.

Serve with either gravy or applesauce.
