Vegan-Friendly Bulletproof Coffee

This variation on the bulletproof coffee is my favorite way to start the day. The creaminess comes from blending the coffee with coconut oil, which has several documented health benefits. If you’re like me and aren’t much of a breakfast person, this is also a terrific way to add some healthy calories first thing in the morning.


  • 12 oz of your favorite coffee
  • 1 Tbsp coconut oil (I prefer unrefined, but either will work)
  • Your sweetener of choice (optional, but I use 1 heaping teaspoon of erythritol)

Put your ingredients into a blender and blend for a few seconds, until creamy. This works very well in a small bullet-style blender, but any blender will do.
