Fish Stew

This is a new recipe I’ve recently created when I was accidentally sent some halibut I hadn’t ordered. So, I came up with a tasty fish stew!

INGREDIENTS

  • 2-3 Tbsp olive oil
  • 1 onion
  • 2-3 large cloves of garlic
  • 6 oz can of tomato paste
  • 5 tomatoes, diced
  • 5 small to medium sized russet potatoes, diced
  • 1 bulb of fresh fennel, diced
  • 8 oz clam juice
  • 1 cup white wine
  • 2 cups miso broth
  • 24 oz of halibut (4 filets), diced.
  • Salt and pepper to taste

DIRECTIONS

In a large stew pot, heat the olive oil until hot, but not smoking. Add the onion and cook on medium heat for four minutes. About two minutes in, add the garlic. Next add the tomato paste and tomatoes and cook for about 10 minutes. Next, add the potatoes, fennel, clam juice, wine, and miso broth. Bring to a roiling boil and then turn down the heat, letting simmer for 1 hour.

Add the halibut and cook for about 5 minutes, or until the halibut is opaque and beginning to flake. Add any salt and pepper to taste.

Serves 4-6 (one serving is about two cups).
